The demi-glace sauce is especially lovely with the bread set, although we also quite like the tonkatsu brown sauce with rice set. A baked rice dish similar to a gratin, dorias became part of Japanese cuisine after the Meiji Restoration when the ban on eating meat was lifted and Western-style foods were popularized. Served with noodles and wedge-cut potatoes, it is very nice with the bread set.
