It\u2019s that time of year when we can truly feel the season\u2019s change. Served with steamed sea urchin, Daikoku mushrooms, and a generous portion of tender, fatty rockfish, it is beautifully arranged on a bed of winter daikon. This dish is served with a rich, mellow broth made from our drinkable sodium carbonate spring water, adding a unique depth of flavor. It is then steamed with Nanatsuboshi, a premium rice from Hokkaido, right before your eyes.
